Base and flavor
  • 2 cup heavy whipping cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract
Peach mixture
  • 2 cup fresh peaches, diced
  • 3 tbsp brown sugar
  • 0.5 tsp ground cinnamon
Cobbler crumble
  • 0.5 cup graham cracker crumbs for crumble
  • 2 tbsp unsalted butter, melted for crumble

Method
 

Cook the spiced peaches
  1. Heat a skillet over medium heat and cook the diced peaches with brown sugar and ground cinnamon for 6–7 minutes, stirring until softened and syrupy, then remove from heat.
  2. Spread the peach mixture on a sheet pan in an even layer and let cool completely before assembling the ice cream.
Make the cobbler crumble
  1. Stir graham cracker crumbs with melted unsalted butter until evenly combined and set aside.
Whip the ice cream base
  1. Beat the heavy whipping cream to stiff peaks, then fold in sweetened condensed milk and vanilla extract until smooth.
Layer and swirl
  1. Pour half the ice cream base into a loaf pan, then layer with half the peach mixture and half the crumble.
  2. Repeat with the remaining base, peaches, and crumble, swirling gently with a knife to create marbled streaks.
Freeze and scoop
  1. Freeze for at least 6 hours, or until firm, before scooping and serving.

Notes

For the best swirl, cool the peaches completely (warm fruit can melt the ice cream base). Store covered in the freezer up to 2–3 weeks; thaw 5 minutes for easier scooping. Freezing is yes—layered portions hold well. For a dairy-light swap, replace heavy whipping cream with a 1:1 ratio of cold coconut cream, but expect a slightly different texture and flavor.
