Base
  • 2 lb ground beef
  • 1 large onion, diced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 1 packet (1 oz) Hidden Valley original Ranch
  • 4 cup beef broth
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Generous toppings
  • shredded cheddar
  • sour cream
  • tortilla chips
  • green onions

Method
 

Brown the beef
  1. Heat a very large pot over medium-high heat and add the ground beef and diced onion. Cook until browned, then drain the fat.
Build the soup
  1. Add the drained black beans, kidney beans, pinto beans, drained corn, Rotel tomatoes, and diced tomatoes to the pot. Stir in the taco seasoning, ranch dressing mix, and Hidden Valley original Ranch until evenly combined.
Simmer
  1. Pour in the beef broth and bring the mixture to a boil over high heat. Then reduce to a simmer and cook for 15-20 minutes, stirring once or twice, until hot and slightly thickened.
Finish and serve
  1. Season with salt and black pepper to taste. Serve immediately with shredded cheddar, sour cream, tortilla chips, and green onions in very generous portions.

Notes
