Ingredients

Frozen hash browns base
  • 1 bag (30 oz) frozen diced hash browns do not thaw
  • 0.5 cup cooked ham, diced
  • 1 onion onion, diced
  • 4 cloves garlic, minced
  • 4 cup chicken broth
Creamy soup layer
  • 1 can (10.5 oz) cream of chicken soup
  • 8 oz cream cheese cubed
  • 1.5 cup shredded cheddar
  • 0.5 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
Toppings
  • 0.25 cup green onions and extra cheddar for topping

Equipment

  • 1 crockpot
  • 1 slow cooker

Method

Start the soup
  1. Add the frozen diced hash browns, diced ham, diced onion, minced garlic, chicken broth, cream of chicken soup, garlic powder, and onion powder to the crockpot, then stir to combine.
  2. Cook on Low for 6-8 hours, or on High for 3-4 hours, until the hash browns are completely tender.
Thicken and melt the creaminess
  1. Mash some of the hash browns in the crockpot to create a thicker consistency, leaving some shreds intact for texture.
  2. Add the cubed cream cheese and stir until fully melted, then mix in the sour cream and shredded cheddar until the soup looks smooth.
Finish and serve
  1. Taste the soup and adjust seasoning with salt and pepper to your preference.
  2. Serve hot, topped with green onions and extra cheddar.

Notes

For the thickest texture, mash about one-third of the hash browns after they’re tender, then fully melt the cream cheese before adding cheddar. Refrigerate leftovers in a covered container for up to 3-4 days; freeze up to 2 months (texture may be slightly softer after thawing). For a lighter swap, use reduced-fat cream cheese and reduced-fat cheddar while keeping the same cooking steps.
