Chicken broth
  • 4 cup chicken broth
Cream cheese
  • 8 oz cream cheese, cubed
Heavy cream
  • 0.5 cup heavy cream (added at end)
Toppings
  • 0.5 cup shredded cheddar
  • 0.5 cup sour cream
  • 1 cup tortilla chips
  • 0.25 cup jalapeños
  • 0.25 cup cilantro

Method
 

Build the soup in the crockpot
  1. Add raw chicken breasts, black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, chicken broth, and cubed cream cheese to the crockpot, then stir to combine (leave the chicken unhandled for now). Keep the mixture looking evenly distributed, with cream cheese cubes visible throughout the broth.
  2. Cook on Low for 6-8 hours or High for 3-4 hours. The soup is ready when the chicken is fully cooked and tender and the broth looks thickened and saucy.
Shred and finish creamy
  1. Remove the chicken, shred it with two forks, and return the shredded chicken to the soup. You should see stringy chicken mixed through the broth.
  2. Stir until the cream cheese is completely melted and incorporated, then stir in the heavy cream. The soup should become smooth and cream-swirl speckled with orange-red tomato tones.
  3. Season with salt and pepper, then serve immediately. Top each bowl with shredded cheddar, sour cream, tortilla chips, jalapeños, and cilantro.

Notes

Pro tip: cube the cream cheese so it melts evenly during the slow cook; if you can’t see any cream cheese streaks after shredding, keep stirring until the texture is fully uniform. Refrigerate leftovers in an airtight container up to 4 days; freezer: yes, freeze up to 2 months (best thawed in the fridge and reheated gently). For a lighter option, use reduced-fat cream cheese and half-and-half instead of heavy cream.
