Beef
  • 3 lb beef chuck roast Chuck roast is best for shredding; trim excess hard fat.
Coconut curry base
  • 1 can (13.5 oz) coconut milk Use full-fat for the richest curry broth.
  • 1 can (14 oz) diced tomatoes Adds body and a light tang to the sauce.
  • 3 tbsp red curry paste Adjust to taste if you prefer mild or extra heat.
  • 4 garlic, minced Fresh minced garlic blends into the sauce while slow cooking.
  • 1 tbsp fresh ginger, grated Grated ginger provides warm, aromatic sweetness.
  • 1 tbsp fish sauce Boosts savory depth; keep it balanced with lime at the end.

  • 1 tbsp lime juice Added at the end for a fresh, bright flavor.
  • 1 stalk lemongrass stalk, bruised Bruise for better aroma release.

Method
 

Season and build the curry sauce
  1. Season chuck roast generously with salt and pepper.
  2. Whisk coconut milk, diced tomatoes, red curry paste, garlic, ginger, fish sauce, brown sugar, cumin, and beef broth until smooth.
  3. Place beef in the Crockpot and pour curry sauce over the top, then add the bruised lemongrass.
Slow-cook until fall-apart tender
  1. Cook on Low for 7-8 hours, until the beef is fall-apart tender.
  2. Remove lemongrass and shred the beef in the sauce so it’s fully coated.
Finish and serve
  1. Stir in lime juice and adjust seasoning with additional salt and pepper if needed.
  2. Serve over steamed rice and top with cilantro, lime wedges, and sliced red chili.

Notes

For best “drip” texture, shred the beef after cooking and stir it back into the saucy broth so the strands soak up curry. Refrigerate leftovers in an airtight container up to 4 days; reheat gently until hot. Freeze yes—portion into containers and freeze up to 3 months, thaw overnight in the fridge. Dietary swap: use tamari instead of fish sauce only if you avoid fish flavor (it will be less savory, so add a little extra salt to balance).
