  • 1.5 lb chicken thighs (bone-in for richest broth)
Carrots, sliced
  • 4 carrots
Celery, sliced
  • 4 celery
Onion, diced
  • 1 onion
Garlic, minced
  • 8 garlic
Fresh ginger, grated
  • 2 tbsp fresh ginger, grated
Chicken broth
  • 8 cup chicken broth
Turmeric
  • 1 tsp turmeric
Dried thyme
  • 1 tsp dried thyme
Dried oregano
  • 0.5 tsp dried oregano
Lemon juice
  • 1 tbsp lemon juice
Honey
  • 1 tbsp honey
Egg noodles
  • 8 oz egg noodles
Fresh parsley and lemon for serving
  • 1 fresh parsley and lemon for serving
Salt and pepper to taste
  • 0.25 tsp salt and pepper to taste

Equipment

  • 1 Dutch oven

Method

Build the soup base
  1. Combine chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, and dried oregano in a large pot. Set heat to high and bring the pot to a boil.
  2. Reduce to a gentle simmer and cook for 25-30 minutes, until the chicken is very tender. Keep a steady simmer so the vegetables soften evenly and the broth turns golden.
Finish the chicken noodle soup
  1. Remove the chicken, shred the meat, and discard the bones and skin. Return the shredded chicken to the pot.
  2. Add egg noodles and simmer for 6-8 minutes until tender. Stir occasionally and look for noodles that are fully cooked but not mushy.
  3. Stir in lemon juice and honey, then season with salt and pepper to taste. Taste and adjust so the broth is bright with a balanced sweet finish.
Serve
  1. Ladle the soup into bowls and top with extra lemon and fresh parsley. Serve hot so the steam carries the garlic-ginger aroma.

Notes

For the richest broth, use bone-in chicken thighs and keep the simmer gentle once it reaches a boil. Refrigerate leftovers in a covered container for up to 4 days; reheat until hot, but cook noodles fresh if you prefer the best texture (no freezer recommended for noodle-heavy soup). For a lighter option, use skinless thighs and skim any excess fat after simmering.
