Ingredients

Chicken and vegetables
  • 1.5 lb chicken breast
  • 4 carrots
  • 3 celery
  • 1 onion
  • 6 clove garlic
  • 2 tbsp fresh ginger
Broth and seasonings
  • 8 cup chicken bone broth
  • 2 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 0.25 tsp cinnamon
  • 0.25 tsp cayenne
  • 1 tsp salt to taste
Finishing and noodles
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 8 oz egg noodles or rice noodles
  • fresh parsley and lemon wedges for serving

Equipment

  • 1 Dutch oven

Method

Simmer the soup
  1. In a Dutch oven, add chicken breast, chicken bone broth, carrots, celery, onion, garlic, and grated fresh ginger. Bring to a simmer over medium heat, then maintain a gentle simmer (about 210-220°F) for 20-25 minutes, until the chicken is cooked through and tender (stir once or twice).
  2. Add turmeric, black pepper, dried thyme, cinnamon, and cayenne to the pot. Let everything simmer together at 210-220°F for 20-25 minutes so the flavors bloom and the broth turns a vivid golden-yellow.
Shred and cook noodles
  1. Remove the chicken from the pot and shred it with two forks, then return the shredded chicken to the broth. Bring the soup back to a simmer (about 210-220°F) and keep it simmering briefly to reheat the chicken.
  2. Add egg noodles or rice noodles and cook for 6-8 minutes, stirring occasionally, until tender. Keep the liquid at a steady simmer so the noodles cook evenly.
Finish and serve
  1. Stir in lemon juice, honey, and apple cider vinegar until the soup tastes bright and balanced. Simmer for 1-2 minutes more to warm through, then remove from heat.
  2. Season with salt to taste and serve immediately with extra lemon and fresh parsley. Keep a visible sprinkle of parsley on top for a fresh, herb-forward finish.

Notes

For best flavor, simmer the vegetables until very tender before shredding the chicken, and don’t add the lemon until the noodles are nearly done so it stays vibrant. Store leftovers in the refrigerator up to 3 days; freeze only the chicken broth base (without noodles) for up to 2 months, then cook fresh noodles when reheating. For a gluten-free swap, use rice noodles or certified gluten-free egg noodles.
